Continuous systems for the production of pasta dough
The continuous kneader is used to prepare the dough for feeding the successive sheeters and moulders, which have production capacities ranging from 200 to 2000 kg/h.
All kneaders are made of stainless steel with a non-slip sheet metal platform (stainless steel or aluminium), safety railings and stairway. They can be supplied with different configurations. Generally they have a dosage device for flour and liquids, but other types of dispenser can be installed depending on the needs of the customer. The supply of flour can be made via screw or compression equipment complete with cyclone. They are also equipped with a high speed centrifuge to mix the raw materials uniformly so that the whole machine can maintain the same production capacity in smaller dimensions. Thanks to some design changes, the kneader can also produce doughs without gluten, which are used by sheeters and moulders to generate gluten-free pasta formats for people with intolerance. The machine also provides for the possibility of recovering production waste.
